Apple-Pomegranate Mead
Nom, nom, nommmmm….
I now say this is the BEST mead I’ve ever made!!!
Starting Gravity was 1.144 on October 23rd; on the 27th, I took a reading at 1.116, and had my first taste – it was VERY sweet, like apple juice and honey would be. No pomegranate flavor, yet. Another reading was done on the 30th, came out to 1.076 and it was still sweet, but less so, and still no pom flavor. On November 5th, it was reracked into a glass secondary fermentation carboy; in the 5 gallon, I added 4 quarts of 100% pom juice (no preservatives, not concentrate) and as it was filling up, I saw I’d have way more than 5 gallons, so I ended up sanitizing the 1 gallon carboy and filled that with only the mead, no extra pom juice added. This way, I have “two batches” – unfortunately, I didn’t think there was enough of the mead only due to a lil bit more than suggested headspace, so I did not taste that one, much less take a reading; I’m certain it’s on track to being a semi-dry mead. I did take a sample of the 5 gallon batch with pom juice added, and it came out to 1.040 (which puts it at roughly 13.4%) – it was close to being semi-dry, and the apple-pom flavors were both bold! I kinda wanna drink it now, but yes yes yes – it’s STILL fermenting!
Bubble, bubble, toil and trouble…
Just ordered a buncha corks and 750ml green wine bottles. Now I need to think of a name and idea for a label… oh, and order more printer ink.
